- 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
- 1 tablespoon butter or olive oil
- Salt and pepper to taste

Instructions
Step 1: Prepare the Ingredients
- Chop the fresh spinach into small pieces.
- Crack the eggs into a bowl, add salt and pepper, and whisk until well-beaten.
- Shred your cheese or measure out the pre-shredded cheese.
Step 2: Cook the Spinach
- Heat a non-stick frying pan over medium heat and add 1 tablespoon of butter or olive oil.
- Once the butter is melted and the pan is hot, add the chopped spinach to the pan.
- Sauté for 1–2 minutes, or until the spinach is wilted and tender.
Step 3: Make the Omelette
- Pour the beaten eggs into the pan over the cooked spinach. Tilt the pan to ensure the eggs spread evenly.
- Cook for 1–2 minutes, allowing the eggs to set around the edges.
- Sprinkle the shredded cheese over one half of the omelette.
Step 4: Fold and Serve
- When the eggs are set but still slightly runny on top, use a spatula to gently fold the omelette in half, covering the cheese.
- Cook for another 1 minute or until the cheese has melted and the omelette is fully cooked.
- Slide the omelette onto a plate, garnish with extra seasoning or fresh herbs if desired, and serve immediately.
Notes
- Cook on Low Heat: Cooking your omelette on low or medium heat prevents it from burning and gives the eggs a nice, soft texture.
- Use Fresh Spinach: Fresh spinach will give you the best flavor, but you can also use frozen spinach if that’s what you have on hand. Just be sure to thaw and squeeze out any excess water before using.
