Ingredients
For the Burger Patties:

1½ lbs ground beef (80/20 blend recommended)

½ tsp smoked paprika

1 tbsp neutral oil or butter (for searing)
For the Jalapeño-Onion Topping:

1 tbsp butter or oil

1 large yellow onion, thinly sliced

2 fresh jalapeños, thinly sliced (remove seeds for milder heat)

½ tsp sugar

Pinch of salt
For the Spicy Sauce:

¼ cup mayonnaise

1 tbsp ketchup

1 tsp Dijon mustard

1 tsp hot sauce (adjust to taste)

For Assembly:

4 brioche burger buns, toasted

4 slices cheddar or pepper jack cheese

Instructions
Step 1: Prepare the Spicy Sauce

In a small bowl, mix mayo, ketchup, mustard, hot sauce, paprika, and garlic powder.

Step 2: Make the Jalapeño-Onion Mix

Heat 1 tbsp butter or oil in a skillet over medium heat.

Step 5: Toast the Buns
