Smashed Potatoes with Garlic and Herbs

Description

These smashed potatoes are crispy on the outside, soft on the inside, and bursting with flavor thanks to the garlic and fresh herbs. A simple yet irresistible side dish!

Ingredients

  • 1 ½ lbs baby potatoes (Yukon gold or red potatoes work great)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)
  • ¼ cup grated Parmesan cheese (optional, but highly recommended)
  • Fresh parsley for garnish

Instructions

Step 1: Boil the Potatoes

  1. Place potatoes in a large pot and cover with salted water.
  2. Bring to a boil and cook for about 15-20 minutes until the potatoes are fork-tender.
  3. Drain and let them cool for a few minutes.

Step 2: Smash the Potatoes

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the boiled potatoes on the baking sheet and gently smash each one using a fork or a potato masher (don’t flatten them completely, just enough to create a surface for crisping).

Step 3: Season the Potatoes

  1. In a small bowl, mix together the olive oil, melted butter, minced garlic, salt, pepper, thyme, and rosemary.
  2. Drizzle or brush this mixture over the smashed potatoes.

Step 4: Bake Until Crispy

  1. Bake the potatoes for 20-25 minutes until they are golden brown and crispy.
  2. If using Parmesan, sprinkle it over the potatoes about 5 minutes before the end of baking for a cheesy, crispy finish.

Step 5: Garnish & Serve

 

  1. Garnish with fresh parsley and serve immediately.

Notes

  • Don’t Overboil: Make sure the potatoes are tender but not falling apart when smashed.
  • Crispier Potatoes: For extra crispiness, flip the potatoes halfway through baking.

 

  • Flavor Add-ins: Feel free to add a dash of paprika, onion powder, or crushed red pepper for extra flavor!
