Ingredients
For the Cookie Dough:
-
½ cup unsalted butter, softened
-
½ cup creamy peanut butter
-
½ cup packed brown sugar
-
¼ cup granulated sugar
-
1 large egg
-
1 tsp vanilla extract
-
1¼ cups all-purpose flour
-
½ tsp baking soda
-
¼ tsp salt
-
¾ cup semi-sweet chocolate chips
For the Filling:
-
24 mini Reese’s peanut butter cups, unwrapped and chilled
Instructions
Step 1: Prep Your Oven and Pan
-
Preheat your oven to 350°F (175°C).
-
Lightly grease a 24-cup mini muffin pan or line with paper mini liners.
-
Place unwrapped mini Reese’s cups in the freezer while making the dough to keep them firm.
Step 2: Make the Cookie Dough
4. In a large bowl, beat together the butter, peanut butter, brown sugar, and granulated sugar until light and creamy (about 2–3 minutes).
5. Add the egg and vanilla, mixing until fully incorporated.
6. In a separate bowl, whisk together flour, baking soda, and salt.
7. Gradually mix the dry ingredients into the wet mixture until just combined.
8. Fold in the chocolate chips with a spatula.
Step 3: Fill the Muffin Pan
9. Scoop about 1 tablespoon of dough into each muffin cup.
10. Press the dough gently into the cup to create a flat base and slight indent in the center.
Step 4: Bake the Cookie Bites
11. Bake for 10–12 minutes or until the edges are lightly golden and the centers are just set.
12. Remove the pan from the oven and immediately press one mini Reese’s into the center of each cookie.
13. Let the bites cool in the pan for 10–15 minutes to set, then gently transfer to a cooling rack.
Notes
Freeze the Reese’s – This keeps them from melting too much when pressed into the hot cookies.
Don’t Overbake – Remove them when just set to keep that soft, chewy texture.
Use a Nonstick Pan – Or liners to prevent sticking and for easy removal.
Let Them Cool – They need time to set before removing from the pan.
Want More Texture? – Sprinkle crushed peanuts or mini chocolate chips on top before baking.
