Ingredients
- 1 cup cottage cheese (preferably full-fat)
- 2 tablespoons butter, melted
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 large egg
- 1/4 cup milk
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the cottage cheese, melted butter, egg, and milk. Stir until well combined.
In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
Add the dry ingredients to the wet ingredients and stir until a soft dough forms. The dough should be sticky but manageable. If it’s too dry, add a little more milk, one tablespoon at a time.
Using a spoon or your hands, scoop out portions of the dough and shape them into small balls or drop them in mounds onto the prepared baking sheet. Space them a little apart as they will spread slightly while baking.
Place the rolls in the preheated oven and bake for 15-18 minutes or until they’re golden brown on top.
Let the rolls cool for a few minutes, then serve them warm with butter, jam, or your favorite dipping sauce.
Notes
- Adjust the Flour – If the dough is too sticky to shape, add a little more flour, but be careful not to overwork the dough.
- Add Flavor – For extra flavor, add a pinch of garlic powder, herbs, or grated cheese to the dough.
- Serve Fresh – These rolls are best enjoyed fresh, but they can be stored in an airtight container for up to 2-3 days.
