Ingredients
2 filet mignon steaks (6 to 8 oz each, 1½–2 inches thick)
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder (optional)
For Butter Basting:
2 tablespoons unsalted butter
2 garlic cloves, smashed
2 sprigs fresh rosemary or thyme
Optional Garnish:
Chopped parsley or thyme
Cracked black pepper
Lemon wedges for serving
Instructions
Step 1: Preheat Oven
Preheat your oven to 400°F (200°C)
Place your cast iron skillet over high heat and allow it to get very hot
Step 2: Season the Steaks
Pat filet mignons dry with paper towels
Season generously with salt, pepper, and garlic powder on all sides
Let rest at room temperature for 15–20 minutes
Step 3: Sear the Steaks
Add olive oil to the hot skillet
Place the steaks in the pan and sear for 2–3 minutes per side, without moving them, until a rich brown crust forms
Use tongs to sear the sides as well for 30 seconds each
Step 4: Butter Baste & Oven Finish
Add butter, garlic, and herbs to the pan
Tilt the skillet and spoon the melted butter over the steaks for 1 minute
Transfer skillet to the oven
Step 5: Cook to Desired Doneness
Roast for 4–6 minutes in the oven, depending on thickness
Check internal temperature with a thermometer:

Step 6: Rest and Serve
Transfer steaks to a cutting board
