Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a muffin tin with paper liners or lightly grease each cup.
Step 2: Prepare the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Set aside.
Step 3: Mix the Wet Ingredients
In a large bowl, whisk the eggs, cottage cheese, honey or maple syrup, oil, and vanilla until well combined.
It’s okay if the cottage cheese isn’t completely smooth—those bits add texture.
Step 4: Combine the Batter
Gradually stir the dry ingredients into the wet mixture using a rubber spatula.
Mix just until the flour disappears—don’t overmix.
Gently fold in the diced peaches until evenly distributed.
Step 5: Fill the Muffin Cups
Divide the batter evenly between the 12 muffin cups, filling each about ¾ full.
Sprinkle a pinch of brown sugar on top of each muffin if desired.
Step 6: Bake
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
