  • ½ teaspoon vanilla extract (optional)

Instructions

Step 1: Prepare the Whipped Ricotta

  1. In a food processor or blender, combine the ricotta cheese, olive oil, honey, and a pinch of salt and pepper.
  2. Blend until smooth and creamy, scraping down the sides if needed. Taste and adjust seasoning, adding a bit of vanilla extract for extra flavor if desired.

Step 2: Prepare the Peaches

  1. In a bowl, combine the diced peaches, honey, chopped basil, and a pinch of salt and pepper.
  2. Gently toss to combine, allowing the peaches to marinate for a few minutes while you prepare the bread.

Step 3: Toast the Baguette Slices

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the baguette slices on a baking sheet in a single layer and drizzle with a little olive oil.
  3. Toast in the oven for about 7-10 minutes, or until golden and crispy, flipping halfway through for even toasting.

Step 4: Assemble the Bruschetta

 

  1. Spread a generous spoonful of the whipped ricotta onto each toasted baguette slice.
  2. Top with a spoonful of the peach mixture, making sure to distribute the peaches and basil evenly.
  3. Drizzle with balsamic glaze if desired for a tangy finish.
