For the Casserole Base:

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cups mushrooms, sliced (button or cremini)

  • 2 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp Worcestershire sauce

  • 2 cups uncooked elbow macaroni or rotini

For the Cheese Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups milk (whole or 2%)

  • 1 cup beef broth

  • 2 cups shredded cheddar cheese

  • ½ cup sour cream

Topping (Optional):

  • ½ cup shredded cheese

  • Chopped pickles or parsley for garnish


Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook the pasta until al dente according to package instructions.

  3. Drain and set aside.

Step 2: Cook the Beef & Mushrooms

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add ground beef and cook until browned. Drain excess fat.

  3. Add diced onion, mushrooms, and garlic. Cook for 5–6 minutes, until veggies are soft.

  4. Stir in salt, pepper, and Worcestershire sauce. Remove from heat.

Step 3: Make the Cheese Sauce

  1. In a saucepan, melt butter over medium heat.

  2. Whisk in flour and cook for 1 minute to form a roux.

  3. Gradually add milk and beef broth, whisking constantly until thickened (about 4–5 minutes).

  4. Stir in shredded cheddar cheese until melted and smooth.

  5. Remove from heat and mix in the sour cream.

Step 4: Combine Everything

  1. Preheat oven to 375°F (190°C).

  2. In a large mixing bowl, combine cooked pasta, beef-mushroom mixture, and cheese sauce.

  3. Pour everything into a greased 9×13-inch baking dish.

  4. Top with extra cheese if desired.

Step 5: Bake the Casserole

  1. Bake for 20–25 minutes until bubbly and golden on top.

  2. Let cool for 5 minutes before serving.

  3. Garnish with chopped parsley or diced pickles for a cheeseburger-style finish.
