Ingredients

For the Crust:

  • 1 cup graham cracker crumbs

  • 3 tbsp unsalted butter, melted

  • 1 tbsp granulated sugar

For the Filling:

  • 16 oz cream cheese, room temp

  • ½ cup sugar

  • 2 eggs

  • ½ cup sour cream

  • 1 tsp vanilla extract

  • ¼ cup rainbow jimmies (avoid nonpareils—they bleed!)

Optional Toppings:

  • Whipped cream

  • Extra sprinkles

  • White chocolate drizzle or frosting swirl


Instructions

Step 1: Prep the Base
Preheat oven to 325°F. Line muffin pan with cupcake liners.
Stir together graham crumbs, melted butter, and sugar. Press into each liner.
Bake for 5 minutes, then let cool slightly.

Step 2: Mix That Filling
Beat cream cheese until smooth. Add sugar, then eggs one at a time.
Mix in sour cream and vanilla. Gently fold in sprinkles with a spatula—don’t overmix!

Step 3: Bake the Cheesecakes
Spoon filling over crusts and smooth the tops.
Bake for 18–20 minutes, or until centers are set but still slightly jiggly.
Cool at room temp, then refrigerate for 2+ hours (or overnight).

 

Step 4: Decorate & Devour
Top with whipped cream, a few sprinkles, and maybe a birthday candle.
Enjoy chilled for the best flavor and texture.

Notes

Switch up the sprinkles for holidays, baby showers, or themed parties.
Want to make mini-minis? Use a mini muffin pan and reduce bake time to ~12 mins.
Need a shortcut? Use pre-made graham crusts or even Oreo cookie bottoms.
Freeze ’em! These freeze beautifully without the toppings.
