Ingredients

For the Chicken:

  • Boneless, Skinless Chicken Breasts (2 large) – The perfect vessel for stuffing.
  • Olive Oil (2 tbsp) – For searing and keeping the chicken juicy.
  • Salt & Black Pepper (to taste) – Essential seasonings.
  • Paprika (1 tsp) – Adds a mild smoky flavor.
  • Dried Oregano (1 tsp) – A classic Mediterranean herb.
  • Garlic Powder (½ tsp) – Enhances the overall flavor.

For the Stuffing:

  • Fresh Spinach (1 cup, chopped) – Adds color and nutrients.
  • Feta Cheese (¼ cup, crumbled) – Brings a tangy, creamy texture.
  • Sun-Dried Tomatoes (¼ cup, chopped) – Adds a sweet, slightly chewy burst of flavor.
  • Garlic (2 cloves, minced) – A must for Mediterranean dishes.
  • Kalamata Olives (2 tbsp, chopped, optional) – For extra Mediterranean flair.

Instructions

Step 1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally, being careful not to cut all the way through, creating a pocket.
  3. Season both sides of the chicken with salt, black pepper, paprika, oregano, and garlic powder.

Step 2: Make the Stuffing

  1. In a bowl, mix together spinach, feta cheese, sun-dried tomatoes, garlic, and olives (if using).
  2. Stuff the mixture into the pockets of each chicken breast. Secure with toothpicks or tie with kitchen twine.

Step 3: Sear the Chicken

  1. Heat olive oil in a skillet over medium heat.
  2. Sear the stuffed chicken for 2–3 minutes per side, until golden brown.

Step 4: Bake to Perfection

  1. Transfer the chicken to a baking dish and bake for 15–20 minutes, or until the internal temperature reaches 165°F (75°C).

Step 5: Serve and Enjoy!

  1. Let the chicken rest for 5 minutes before slicing. Serve with a side of roasted vegetables, couscous, or a fresh Greek salad.

Notes

  • Don’t Overstuff: Leave room to seal the edges properly.
  • Use a Meat Thermometer: Ensures the chicken is fully cooked but not dry.
  • Secure the Filling: Toothpicks help keep everything inside while cooking.
