  • 1 cup mascarpone cheese (room temperature)

  • 4 large eggs (separated)

  • 1 tsp cream of tartar

  • 1 tbsp sweetener of your choice (such as monk fruit sweetener or erythritol)

  • ½ tsp vanilla extract (optional for flavor)

  • Pinch of salt


Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. Separate the egg whites from the yolks, placing the egg whites in a large, clean mixing bowl and the yolks in a separate bowl.

Step 2: Beat the Egg Whites

  1. Add the cream of tartar and a pinch of salt to the egg whites.

  2. Using an electric mixer, beat the egg whites on high speed until stiff peaks form (about 3-5 minutes). This step is crucial for the light, airy texture of the bread.

Step 3: Mix the Mascarpone Mixture

  1. In another bowl, whisk the mascarpone cheese, egg yolks, sweetener, and vanilla extract (if using) together until smooth and well-combined. The mixture should be thick and creamy.

Step 4: Fold the Mixture Together

  1. Gently fold the mascarpone mixture into the whipped egg whites. Use a spatula to carefully combine the two mixtures, taking care not to deflate the egg whites.

  2. The goal is to keep as much air in the mixture as possible for a light, cloud-like bread.

Step 5: Shape & Bake

  1. Spoon the mixture onto the prepared baking sheet, creating 6-8 rounds (depending on how large you want each piece). You can shape them into circles using the back of a spoon or your hands.

  2. Smooth the tops slightly to ensure even baking.

  3. Bake in the preheated oven for 25-30 minutes, or until the cloud breads are golden brown on top and firm to the touch.

Step 6: Cool & Serve

 

  1. Let the bread cool on the baking sheet for a few minutes before transferring it to a wire rack to cool completely.

  2. Once cooled, serve and enjoy! You can enjoy these as a snack, toast them for breakfast, or use them as a side to your favorite meal.

Notes

Use Room Temperature Mascarpone – For a smooth batter, ensure your mascarpone cheese is at room temperature before mixing it with the egg yolks.

Stiff Egg Whites – Be sure your egg whites form stiff peaks to create that cloud-like texture. If the peaks are too soft, the bread won’t rise as well.

Gentle Folding – Fold the mascarpone mixture into the egg whites gently to avoid losing the air you’ve whipped into the egg whites.

Don’t Overbake – Keep an eye on the bread while it’s baking. Overbaking can make it dry. You want it golden but soft on the inside.
