Instructions
Step 1: Marinate the Chicken
Whisk together olive oil, lime zest + juice, garlic, chili powder, cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes (or up to 2 hours).
Step 2: Cook the Chicken
Heat a grill pan or skillet over medium-high heat. Grill chicken for 5–7 minutes per side, or until golden and cooked through. Let rest, then slice.
Step 3: Build Your Bowls
Start with a scoop of rice. Top with sliced chicken, mango, red onion, corn, black beans, and avocado. Sprinkle with chopped cilantro and squeeze fresh lime over the top.
Step 4: Serve & Enjoy
Serve warm, room temp, or chilled—it’s delicious every way!
Notes
Char your corn for smoky flavor.
Add a dollop of sour cream or Greek yogurt for creamy contrast.
Spice it up with jalapeños or hot sauce.
Make it taco-style by wrapping the ingredients in warm tortillas.
