Ingredients

½ cup unsalted butter, melted

12 oz cream cheese, softened
½ cup powdered sugar
¼ cup fresh lime juice
1 teaspoon lime zest
1 teaspoon vanilla extract
1 cup whipped cream or whipped topping

1 (3 oz) package lime gelatin
½ cup boiling water
½ cup cold water
1 teaspoon lime zest
1 cup whipped cream or whipped topping

Instructions
Step 1: Prepare the Crust
Mix graham cracker crumbs and sugar in a bowl
Stir in melted butter until evenly moistened
Press the mixture into the bottom of a 9-inch springform pan
Chill in the refrigerator for 15–20 minutes while you prepare the filling
Step 2: Make the Cheesecake Layer
In a large bowl, beat softened cream cheese until smooth
Add powdered sugar, lime juice, lime zest, and vanilla extract
Beat until creamy and combined
Gently fold in whipped cream or topping until smooth and airy
Spread evenly over the chilled crust and refrigerate while making the mousse
Step 3: Prepare the Lime Mousse
In a medium bowl, dissolve lime gelatin in boiling water
Add cold water and stir until fully combined
Let cool to room temperature (about 10–15 minutes)
Fold in whipped cream and lime zest until light and fluffy
Pour over the cheesecake layer and smooth the top
Chill the entire cheesecake for at least 4 hours, preferably overnight
