Ingredients
For the Dough:

3½ cups all-purpose flour (plus extra for kneading)

1 packet (2¼ tsp) instant yeast

1 tbsp sugar

1½ tsp salt

1¼ cups warm water (110°F)

2 tbsp olive oil
For the Herb & Cheese Filling:

1½ tsp dried Italian seasoning

1 tsp garlic powder

½ tsp onion powder

1½ cups shredded mozzarella cheese

½ cup freshly grated Parmesan cheese

1 tbsp olive oil (for brushing)

2 tbsp chopped fresh parsley (optional)
For the Topping:

2 tbsp shredded mozzarella

1 tbsp grated Parmesan

½ tsp dried Italian seasoning
Instructions
Step 1: Make the Dough

In a large bowl, stir together warm water, sugar, and instant yeast. Let it sit for 5–10 minutes until foamy.

Add the flour, salt, and olive oil. Mix until a rough dough forms.

Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.

Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm place for about 1 hour, or until doubled in size.
Step 2: Prepare the Filling
5. In a small bowl, mix the Italian seasoning, garlic powder, onion powder, and parsley (if using). Set aside.
Step 3: Shape the Bread
6. Punch down the risen dough and roll it out on a floured surface into a rectangle (about 10×14 inches).
7. Brush with 1 tbsp olive oil.
8. Sprinkle evenly with the herb mixture, mozzarella, and Parmesan cheese.
Step 4: Roll and Second Rise
9. Starting from the short end, roll the dough tightly like a jelly roll.
10. Pinch the seam to seal and tuck the ends under.
11. Place seam-side down on a baking sheet lined with parchment or into a greased loaf pan.
12. Cover loosely and let rise for 30–45 minutes until puffy.
Step 5: Add Toppings and Bake

14. Sprinkle the top of the loaf with more mozzarella, Parmesan, and Italian seasoning.
15. Bake for 25–30 minutes, or until golden brown and the loaf sounds hollow when tapped.
