For the Burger Patties:

  • 1 lb ground beef (80/20 for maximum juiciness)

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

For the Toppings:

  • 4 slices Irish cheddar or aged white cheddar

  • 1 large onion, thinly sliced

  • 1 tbsp butter (for sautéing)

  • 1 cup shredded lettuce

  • 1 large tomato, sliced

  • 4 brioche or potato buns, toasted

For the Pub Sauce:

  • ¼ cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • 1 tsp horseradish (optional, for kick)

  • Pinch of black pepper


Instructions

Step 1: Make the Pub Sauce

  1. In a small bowl, stir together mayonnaise, Dijon mustard, Worcestershire, horseradish (if using), and black pepper.

  2. Chill in the fridge until ready to use.

Step 2: Caramelize the Onions

  1. Melt butter in a skillet over medium-low heat.

  2. Add sliced onions and sauté for 10–15 minutes, stirring occasionally, until soft and golden.

  3. Remove from heat and set aside.

Step 3: Make the Burger Patties

  1. In a mixing bowl, combine ground beef with Worcestershire, Dijon mustard, garlic powder, onion powder, salt, and pepper.

  2. Form into 4 equal-sized patties and press a slight dimple in the center of each to prevent puffing.

Step 4: Cook the Patties

  1. Heat a skillet or grill pan over medium-high heat.

  2. Cook burgers for about 4–5 minutes per side, or until cooked to your liking.

  3. In the final minute, top with cheese and cover the pan to melt.

Step 5: Toast the Buns

  1. Toast the buns, cut-side down, in a dry pan or under the broiler until golden.

Step 6: Assemble the Burgers

  1. Spread pub sauce on the top and bottom buns.

  2. Add lettuce and tomato to the bottom bun.

  3. Place the cheesy patty on top, followed by a generous scoop of caramelized onions.
