Ingredients

Scale
  • 2 lbs carrots, peeled and sliced into sticks or left whole if small

  • 2 tbsp olive oil

  • 3 tbsp honey

  • 1 ½ tsp fresh thyme leaves (or ½ tsp dried thyme)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: 1 tbsp balsamic vinegar (adds a tangy depth)

  • Optional garnish: extra fresh thyme or chopped parsley

Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prepare the Carrots
Peel the carrots and cut them into uniform sticks, about 3–4 inches long.
If using thin baby carrots or young carrots, you can leave them whole.
Place them in a large mixing bowl.

Step 3: Season and Toss
Add olive oil, honey, thyme, salt, and pepper to the bowl with the carrots.
If using balsamic vinegar, add it now.
Toss everything until the carrots are evenly coated.

Step 4: Arrange and Roast
Spread the carrots in a single layer on the prepared baking sheet.
Avoid overcrowding so they roast evenly.
Roast for 25–30 minutes, turning once halfway through, until the carrots are tender and golden brown at the edges.

Step 5: Garnish and Serve
Transfer the carrots to a serving platter.
Sprinkle with extra thyme or chopped parsley for a fresh pop of flavor.
Serve warm and enjoy the sweet-savory goodness.

Notes

Use Fresh Thyme – It adds the best flavor and aroma.
Cut Carrots Evenly – Uniform pieces roast more evenly.
Don’t Skip the Turn – Flipping halfway through ensures caramelization on all sides.
Add a Tangy Note – A splash of balsamic vinegar or lemon juice brightens the dish.
Finish with a Pinch of Flaky Salt – Adds a gourmet touch and balances the sweetness.
