Ingredients

  • All-Purpose Flour (2 cups) – The base for tender biscuits.
  • Baking Powder (1 tbsp) – Helps the biscuits rise.
  • Salt (½ tsp) – Enhances the flavor.
  • Black Pepper (¼ tsp) – Adds a slight kick.
  • Butter (6 tbsp, cold & cubed) – For flakiness.
  • Cottage Cheese (1 cup, small curd) – Adds moisture and richness.
  • Milk (¼ cup) – Helps bring the dough together.
  • Fresh Herbs (2 tbsp, chopped) – Try parsley, chives, or dill for extra flavor.
  • Garlic Powder (½ tsp, optional) – A subtle savory boost.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2: Mix Dry Ingredients

In a large mixing bowl, whisk together flour, baking powder, salt, black pepper, and garlic powder (if using).

Step 3: Cut in Butter

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or fork to mix until the texture resembles coarse crumbs.

Step 4: Add Cottage Cheese & Herbs

Stir in the cottage cheese, milk, and chopped herbs. Mix gently until a dough forms. If the dough is too dry, add a little more milk.

Step 5: Shape the Biscuits

Turn the dough onto a lightly floured surface. Pat it into a ¾-inch thick circle. Use a biscuit cutter or a glass to cut out rounds, or simply shape them by hand.

Step 6: Bake

Place the biscuits on the prepared baking sheet, leaving space between them. Bake for 15–18 minutes, or until golden brown on top.

Step 7: Serve & Enjoy

Let the biscuits cool slightly before serving. Enjoy them warm with butter or alongside your favorite meal.

Notes

  • Use Cold Butter: This helps create a flaky texture.
  • Don’t Overmix: Mix just until the dough comes together for tender biscuits.
  • Chill Before Baking: If the dough feels warm, refrigerate for 10 minutes before baking for extra fluffiness.
