Ingredients

For the Chicken Marinade:

  • lbs boneless, skinless chicken breasts or thighs, sliced into strips

  • 2 tbsp olive oil

  • 2 tbsp lime juice

  • 2 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

For the Veggies and Pineapple:

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 1 small fresh pineapple, peeled, cored, and sliced into rings

  • 1 tbsp olive oil

  • Salt and pepper to taste

For Serving:

  • 8 small flour or corn tortillas, warmed

  • Fresh cilantro, chopped

  • Lime wedges

  • Sliced avocado or guacamole (optional)

  • Salsa or pico de gallo (optional)


Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, whisk together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper.

  2. Add sliced chicken and toss until well coated.

  3. Let the chicken marinate for at least 20 minutes while you prep the other ingredients.

Step 2: Prep the Pineapple and Veggies
4. Slice your pineapple into ½-inch thick rings or half-rings.
5. In another bowl, toss the bell peppers and red onion with olive oil, salt, and pepper.

Step 3: Grill the Chicken and Pineapple
6. Preheat your grill or grill pan over medium-high heat.
7. Grill chicken for 4–5 minutes per side or until fully cooked with nice char marks.
8. At the same time or afterward, grill the pineapple rings for 2–3 minutes per side until caramelized.
9. Remove chicken and pineapple from grill and let rest for a few minutes.

Step 4: Sauté the Veggies
10. On the grill (in a grill basket) or stovetop, cook the peppers and onions for 6–8 minutes, stirring occasionally, until slightly charred and tender.

Step 5: Slice and Assemble
11. Slice the grilled pineapple into chunks or strips.
12. Warm your tortillas in foil on the grill or in a skillet.
13. Fill each tortilla with grilled chicken, sautéed veggies, and pineapple.
14. Top with chopped cilantro and a squeeze of lime juice. Add avocado, salsa, or other toppings if desired.

Notes

Use Fresh Pineapple – For the juiciest, caramelized flavor.

Let Chicken Rest – After grilling, this helps keep it juicy.

Grill in Batches – Don’t overcrowd your grill pan for perfect char.

Customize Your Heat – Add sliced jalapeños or hot sauce for an extra kick.
