For the Foil Packs:

  • 1 lb large shrimp (peeled and deveined)

  • 1 bunch asparagus (ends trimmed and cut into 2-inch pieces)

  • 2 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ¼ tsp red pepper flakes (optional for a spicy kick)

  • ½ tsp Italian seasoning or dried oregano

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 tbsp lemon juice (freshly squeezed)

  • 1 tsp lemon zest

  • 1 tbsp fresh parsley, chopped

For Serving (Optional):

  • Lemon wedges

  • Cooked jasmine rice or quinoa

  • Warm crusty bread


Instructions

Step 1: Preheat & Prepare
Preheat your oven to 400°F (200°C) or heat your grill to medium-high heat.
Cut 4 large sheets of aluminum foil (about 12×16 inches each) and set them aside.

Step 2: Season the Shrimp and Asparagus
Place shrimp and asparagus in a mixing bowl.
Drizzle with olive oil, then season with salt, pepper, paprika, red pepper flakes, and Italian seasoning.
Toss everything together until well coated.

Step 3: Make the Garlic Butter Sauce
In a small bowl, mix melted butter, minced garlic, lemon juice, lemon zest, and parsley.
Stir to combine and set aside.

Step 4: Assemble the Foil Packs
Divide the shrimp and asparagus evenly among the four foil sheets.
Spoon the garlic butter sauce evenly over each portion.
Fold the long edges of the foil together and roll to seal, then fold up the sides to create a secure packet.

Step 5: Cook the Foil Packs
For Oven: Place foil packets on a baking sheet and bake for 15–17 minutes.
For Grill: Place packets directly on the grill and cook for 10–12 minutes, flipping halfway through.

 

Step 6: Serve & Enjoy
Carefully open the foil packs (watch out for hot steam).
Garnish with extra chopped parsley and a squeeze of lemon juice.
Serve directly in the foil or transfer to plates with your choice of rice, quinoa, or warm bread to soak up the garlic butter.

Notes

Use Jumbo Shrimp – Larger shrimp are less likely to overcook and stay juicy.

Cut Asparagus Evenly – Uniform pieces cook more evenly in the foil.

Seal Tightly – This locks in steam and ensures your shrimp stay tender.

Add Extra Veggies – Mushrooms, bell peppers, or cherry tomatoes make great additions.
