  • 1 can (15 oz) pitted cherries (with juice)
  • ¾ cup granulated sugar
  • 2 tablespoons butter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 egg
  • ½ teaspoon ground cinnamon (optional)

Instructions

Step 1: Prepare the Cherry Base

  1. Preheat the oven to 350°F (175°C).
  2. In a small saucepan, melt butter over medium heat.
  3. Stir in sugar and the canned cherries with their juice. Bring the mixture to a simmer, stirring occasionally, and cook for about 5 minutes until the sauce thickens slightly. Remove from heat.

Step 2: Make the Cobbler Batter
4. In a medium bowl, combine the flour, baking powder, salt, and cinnamon (if using).
5. In a separate bowl, whisk together the milk, egg, and vanilla extract.
6. Add the wet ingredients to the dry ingredients and stir until smooth.

Step 3: Assemble the Cobbler
7. Pour the cherry mixture into the bottom of a greased 9-inch baking dish.
8. Spoon the cobbler batter over the cherries, spreading it evenly. Do not mix them.

Step 4: Bake
9. Bake the cobbler in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 5: Serve and Enjoy
10. Let the cobbler cool for a few minutes, then run a knife around the edges to loosen.
11. Invert the baking dish onto a plate and serve warm with a scoop of vanilla ice cream or whipped cream.
