For the Puff Pastry Stacks:

  • 1 package (2 sheets) frozen puff pastry, thawed

  • 6 oz sliced turkey ham

  • 6 oz shredded or sliced cheese (cheddar, Swiss, provolone, or mozzarella)

  • 1 tbsp Dijon mustard (optional)

  • 1 egg

  • 1 tbsp milk or water (for egg wash)

  • ½ tsp garlic powder (optional)

  • ½ tsp dried thyme or Italian seasoning (optional)

  • 1 tbsp sesame seeds or poppy seeds (optional garnish)


Instructions

Step 1: Prep the Pastry

  1. Preheat oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper and set aside.

  3. On a lightly floured surface, unfold the puff pastry sheets. Roll slightly if needed for even thickness.

  4. Cut each sheet into 9 squares (3 rows by 3 columns), for a total of 18 squares.

Step 2: Assemble the Stacks

  1. On 9 of the squares, spread a small dab of Dijon mustard (if using).

  2. Layer with a slice of turkey ham and a generous spoonful of cheese.

  3. Top each stack with another square of puff pastry.

  4. Use a fork to crimp the edges together and seal each stack.

Step 3: Add Egg Wash & Season

  1. In a small bowl, whisk together the egg and milk or water.

  2. Brush the tops of each pastry stack with the egg wash.

  3. Sprinkle garlic powder, herbs, and sesame or poppy seeds on top, if desired.

Step 4: Bake to Golden Perfection

  1. Bake the puff pastry stacks for 18–22 minutes, or until puffed and deep golden brown.

  2. Let cool on a wire rack for at least 5 minutes before serving to allow the filling to set.

Notes

Keep It Cold – Cold pastry puffs up better, so work quickly or chill before baking.
Don’t Overfill – Too much filling can make it harder to seal and result in leaks.
Seal Well – Press edges firmly with a fork to keep the cheese and ham sealed inside.
Use Parchment – This helps prevent sticking and makes cleanup easier.
