For the Herb Yogurt Sauce:
- 1 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon fresh chives, chopped
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Potatoes
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat.
- Wash and cut the baby potatoes into small, bite-sized chunks.
- In a large mixing bowl, toss the potato pieces with olive oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper until evenly coated.
Step 2: Roast the Potatoes
- Spread the seasoned potato chunks in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges. You can check for crispiness by poking a fork into the potatoes—they should be tender inside and crispy outside.
Step 3: Make the Herb Yogurt Sauce
- While the potatoes are roasting, combine the Greek yogurt, lemon juice, olive oil, minced garlic, dill, and chives in a bowl.
- Season with salt and pepper to taste, then stir well until the sauce is smooth and creamy.
Step 4: Serve and Enjoy!
- Once the potato bites are done roasting, remove them from the oven and transfer them to a serving platter.
