Ingredients

  • Baby Potatoes (1 ½ lbs, halved) – Creamy on the inside, crispy on the outside.
  • Parmesan Cheese (½ cup, grated) – Creates the perfect crunchy coating.
  • Garlic Powder (1 tsp) – Adds a savory depth of flavor.
  • Paprika (½ tsp) – Enhances the color and taste.
  • Salt (½ tsp) – Brings out the flavors.
  • Black Pepper (¼ tsp) – A hint of spice.
  • Olive Oil (3 tbsp) – Helps achieve crispy edges.
  • Fresh Parsley (2 tbsp, chopped) – For a fresh finishing touch.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prepare the Parmesan Mixture

In a small bowl, mix grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.

Step 3: Coat the Potatoes

Drizzle the halved baby potatoes with olive oil and toss to coat evenly. Sprinkle the Parmesan mixture over the potatoes and mix until well-coated.

Step 4: Arrange & Bake

Place the potatoes cut-side down on the prepared baking sheet. Bake for 35–40 minutes, or until the potatoes are crispy and golden brown.

Step 5: Garnish & Serve

 

Remove from the oven and sprinkle with fresh parsley. Serve immediately and enjoy!

Notes

  • Use Freshly Grated Parmesan: Pre-packaged cheese doesn’t melt as well.
  • Don’t Overcrowd the Pan: Leave space between the potatoes for even crisping.
  • Place Cut-Side Down: Ensures maximum crunch on the edges.
