For the Creamy Orzo:

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 small yellow onion, finely chopped

  • 3 cloves garlic, minced

  • 8 oz mushrooms (cremini or white), thinly sliced

  • 1 cup orzo pasta (uncooked)

  • 2 cups vegetable broth (or chicken broth)

  • 1 cup milk (whole or 2%)

  • 2 cups fresh baby spinach

  • ½ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • ¼ tsp red pepper flakes (optional)

For Garnish:

  • Extra Parmesan cheese

  • Chopped parsley or thyme (optional)


Instructions

Step 1: Sauté Aromatics and Mushrooms

  1. Heat olive oil and butter in a large skillet over medium heat.

  2. Add the chopped onion and sauté for 2–3 minutes until translucent.

  3. Stir in the garlic and cook for another 30 seconds.

  4. Add the sliced mushrooms and sauté for 5–6 minutes, until browned and tender.

Step 2: Toast the Orzo
5. Stir the orzo into the pan with the mushrooms and toast for 1–2 minutes.
6. This step adds flavor and helps the orzo hold its shape as it cooks.

Step 3: Simmer with Broth and Milk
7. Pour in the broth and milk, stirring to combine.
8. Bring to a gentle simmer. Reduce heat to low and cook uncovered for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.

Step 4: Add Spinach and Cheese
9. Once the orzo is cooked, stir in the baby spinach and cook for 1–2 minutes, until wilted.
10. Remove the pan from heat and stir in the grated Parmesan cheese.
11. Season with salt, black pepper, and red pepper flakes (if using). Adjust to taste.
