Ingredients
-
1 tablespoon butter or olive oil
-
2–3 cups cooked, shredded chicken (rotisserie works great)
-
4 strips bacon, cooked and crumbled
-
1 (16 oz) package potato gnocchi (shelf-stable or refrigerated)
-
3 cloves garlic, minced
-
1 cup chicken broth
-
1 cup heavy cream
-
1 (8 oz) block cream cheese, cubed
-
1 cup shredded cheddar cheese
-
1 tablespoon ranch seasoning
-
Salt & pepper to taste
-
Optional: chopped parsley or green onions for garnish
Instructions
Melt the butter in a large skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant. Stir in the gnocchi and cook for 2–3 minutes until slightly golden.
Pour in the chicken broth and cream. Stir in the cubed cream cheese and ranch seasoning. Cook for 4–5 minutes, stirring often, until the sauce is smooth and starts to thicken.
Stir in the shredded chicken and crumbled bacon. Add the cheddar cheese and mix until melted and creamy. Let everything simmer for 3–5 more minutes, until heated through.
Taste and adjust seasoning with salt and pepper. Garnish with parsley or green onions and serve warm. Prepare to fall in love with every bite.
Notes
Use Fresh or Shelf-Stable Gnocchi – Both work great, just be sure to avoid overcooking.
Soften Cream Cheese First – Makes it melt into the sauce more quickly and smoothly.
Add a Veggie Boost – Stir in baby spinach or steamed broccoli during the final simmer.
Make it Spicy – Add a pinch of cayenne or red pepper flakes for a subtle heat.
