For the Soup:

  • 1 medium butternut squash, peeled, seeded, & cubed
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ lb (225g) beef sausage, casing removed
  • 4 cups chicken or vegetable broth
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ cup heavy cream (or coconut milk for a dairy-free option)
  • ¼ tsp nutmeg (optional, for extra warmth)

For Garnish (Optional):

  • Fresh parsley, chopped
  • Crumbled cooked sausage
  • A drizzle of cream

Instructions

Step 1: Roast the Butternut Squash

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and black pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes, until fork-tender.

Step 2: Cook the Beef Sausage

  1. While the squash roasts, heat a large pot over medium heat.
  2. Add the beef sausage and cook, breaking it into crumbles, until browned. Remove and set aside.

Step 3: Sauté the Aromatics

  1. In the same pot, add a little more oil if needed.
  2. Sauté the onion until soft, about 3 minutes.
  3. Add garlic, smoked paprika, and thyme, cooking for 1 more minute until fragrant.

Step 4: Blend & Simmer

  1. Add the roasted butternut squash and broth to the pot.
  2. Use an immersion blender (or transfer to a regular blender) to blend until smooth.
  3. Stir in the cooked beef sausage, heavy cream, and nutmeg.
  4. Simmer for 5-10 minutes, adjusting seasoning if needed.

Step 5: Serve & Enjoy

 

  1. Ladle into bowls and top with fresh parsley, extra sausage crumbles, and a drizzle of cream.
  2. Serve warm with crusty bread or garlic toast.
