¾ cup cottage cheese (smooth or small curd)

Instructions
Step 1: Preheat Oven and Prepare Pan
Preheat your oven to 350°F (175°C).
Line a 9×5-inch loaf pan with parchment paper or grease it lightly for easy removal.
Step 2: Mash the Bananas
In a large bowl, mash the bananas using a fork or potato masher. You should have about 1½ cups of mashed bananas.
Step 3: Add the Wet Ingredients
To the mashed bananas, add the cottage cheese, eggs, honey (or maple syrup), vanilla, and melted coconut oil.
Whisk until smooth and well combined. Small bits of cottage cheese are okay.
Step 4: Add the Dry Ingredients
Sprinkle in the flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg.
Stir gently with a spatula just until everything is combined—don’t overmix.
Step 5: Fold in Optional Add-Ins
If using, fold in your choice of chopped nuts, chocolate chips, or seeds for extra flavor and texture.
Step 6: Pour and Smooth
Pour the batter into the prepared loaf pan and spread the top evenly with a spatula.
Step 7: Bake the Bread
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
If the top browns too quickly, loosely cover with foil during the last 10 minutes.
Step 8: Cool and Slice
Let the bread cool in the pan for 10 minutes.
Remove and transfer to a wire rack to cool completely before slicing.

Use Overripe Bananas – Bananas with lots of brown spots are sweeter and mash better.
