- Curry Powder (1 tsp) – Mild spice for warmth.
- Lime Juice (1 tbsp) – Brightens the sauce.
- Honey (1 tsp) – Adds a touch of sweetness.
- Salt & Pepper – To taste.
- Fresh Cilantro (¼ cup, chopped) – For garnish.
Instructions
In a large bowl, combine ground chicken, egg, panko breadcrumbs, minced garlic, grated ginger, green onion, soy sauce, and lime zest. Mix until just combined.
Roll the mixture into 1-inch meatballs. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes. Remove and set aside.
In the same skillet, add a bit more oil if needed. Sauté garlic and ginger for about 1 minute until fragrant. Pour in coconut milk and chicken broth, then stir in curry powder, lime juice, honey, salt, and pepper. Simmer for 5 minutes.
Return the browned meatballs to the skillet. Cover and simmer for 10–12 minutes until the meatballs are fully cooked and the sauce thickens slightly.
Sprinkle with fresh cilantro and serve warm. Enjoy over jasmine rice, quinoa, or with warm naan bread!
