Instructions
In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Place the dough between two sheets of parchment paper and roll it into a rectangle (about ¼ inch thick).
Mix the brown sugar and cinnamon in a small bowl. Brush the rolled-out dough with melted butter and sprinkle the cinnamon-sugar mixture evenly on top.
Roll the dough tightly into a log, just like a cinnamon roll. Wrap in plastic wrap and refrigerate for at least 1 hour (this helps with clean slicing).
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Slice the chilled dough into ¼-inch thick cookies and place them on the baking sheet. Bake for 10–12 minutes or until the edges are lightly golden.
While the cookies cool, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cookies once they are fully cooled.
