For the Brownie Bombs:

  • 1 box brownie mix (plus eggs, oil, and water as listed on box)

  • ½ tsp almond extract (optional, enhances cherry flavor)

  • 24 maraschino cherries, well-drained and patted dry

For the Chocolate Coating:

  • 12 oz semi-sweet chocolate chips or melting wafers

  • 1 tbsp coconut oil or shortening (for smooth dipping)

Optional Garnish:

  • White chocolate drizzle

  • Sprinkles or crushed nuts

  • Crushed freeze-dried cherries


Instructions

Step 1: Bake the Brownies

  1. Preheat oven to 350°F (175°C).

  2. Prepare brownie batter according to the box instructions, adding almond extract if using.

  3. Bake in a greased or parchment-lined pan until set (usually about 25–30 minutes).

  4. Let brownies cool completely.

Step 2: Prepare the Cherries

  1. While brownies cool, drain cherries and pat them very dry with paper towels.

  2. Set aside on a plate lined with paper towels to soak up any excess juice.

Step 3: Make the Brownie Bombs

  1. Once cooled, crumble brownies into a large bowl. The texture should be fudgy and moist.

  2. Scoop about 1½ tablespoons of brownie and flatten slightly in your palm.

  3. Place a cherry in the center and wrap the brownie around it. Roll gently into a ball.

  4. Repeat with remaining brownies and cherries.

  5. Place the bombs on a parchment-lined tray and refrigerate for 20–30 minutes to firm up.

Step 4: Melt the Chocolate

  1. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring between each, until smooth.

  2. Be careful not to overheat. Stir until glossy and pourable.

Step 5: Dip & Set

  1. Use a fork to dip each brownie bomb into the melted chocolate, coating completely.

  2. Tap off excess chocolate and place on parchment paper.

  3. Add any garnishes like sprinkles or crushed cherries before the coating sets.

  4. Allow the chocolate to harden at room temperature or chill in the fridge for 10–15 minutes.
