For the Filling:

  • 2 cups cooked shredded chicken (rotisserie chicken works perfectly)

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • 1 tbsp taco seasoning (use your favorite blend)

  • 1 cup shredded cheddar or Mexican cheese blend

  • ¼ cup chopped green onions

  • ¼ cup diced red bell pepper (optional, for crunch and color)

  • 1 tbsp chopped fresh cilantro (optional)

For Assembly:

  • 5 large flour tortillas (10-inch size, soft and fresh)

Optional for Serving:

  • Salsa or guacamole

  • Jalapeño slices

  • Extra cilantro or chopped tomatoes

  • Lime wedges


Instructions

Step 1: Make the Filling

  1. In a mixing bowl, beat the softened cream cheese and sour cream together until smooth.

  2. Add taco seasoning and mix until combined.

  3. Stir in shredded chicken, cheddar cheese, green onions, red bell pepper, and cilantro (if using).

  4. Mix well until the filling is fully blended.

Step 2: Assemble the Pinwheels

  1. Lay one tortilla flat on a clean surface.

  2. Spread a generous, even layer of the chicken mixture across the entire tortilla, leaving a ½-inch border around the edges.

  3. Roll up the tortilla tightly into a log.

  4. Wrap the rolled tortilla in plastic wrap.

  5. Repeat with the remaining tortillas and filling.

Step 3: Chill the Rolls

  1. Place the wrapped rolls in the refrigerator for at least 1 hour to firm up (or up to overnight).

  2. This step helps the pinwheels hold their shape when slicing.

Step 4: Slice & Serve

  1. Unwrap each tortilla roll and place on a cutting board.

  2. Use a sharp knife to slice into 1-inch thick pinwheels.

  3. Arrange on a serving platter and garnish with fresh herbs or toppings of your choice.

  4. Serve chilled or at room temperature with dipping sauces like salsa, guacamole, or ranch.

Notes

Use Fresh Tortillas – They’re easier to roll and less likely to crack.
Room Temp Cream Cheese – Makes mixing and spreading much easier.
Roll Tightly – Keeps the filling from falling out when sliced.
Chill Before Slicing – Prevents the pinwheels from getting squished.
