Ingredients
- 1 lb chicken breast (thinly sliced)
- 4 oz chow mein noodles (or any Asian noodles)
- 1 tablespoon vegetable oil
- 2 cups cabbage (shredded)
- 1 cup carrots (julienned or shredded)
- 1 bell pepper (sliced)
- 2 cloves garlic (minced)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- ½ teaspoon ground ginger
- ½ teaspoon sugar
- 1 teaspoon cornstarch (optional, to thicken the sauce)
- Green onions (for garnish)
Instructions
Step 1: Cook the Noodles
Cook the chow mein noodles according to the package instructions, then drain and set aside.
Step 2: Stir-Fry the Chicken
Heat vegetable oil in a large pan or wok over medium-high heat.
Add the sliced chicken and stir-fry until browned and cooked through, about 5-7 minutes.
Remove the chicken from the pan and set aside.
Step 3: Stir-Fry the Vegetables
In the same pan, add garlic, cabbage, carrots, and bell pepper. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
Step 4: Make the Sauce
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, ginger, sugar, and cornstarch (if using). Add this sauce to the pan with the veggies.
Step 5: Combine the Chicken & Noodles
Add the cooked chicken and noodles to the pan, tossing everything together until evenly coated with the sauce. Stir-fry for another 2-3 minutes to heat everything through.
Step 6: Serve and Enjoy
Garnish with green onions and serve immediately!
Notes
Don’t Overcook the Vegetables – Keep them crisp for a nice texture contrast.
Use Fresh Noodles – Fresh chow mein noodles will provide a better texture than dry noodles.
Customize the Sauce – Add more or less of the sauces depending on your taste preferences.
Spicy Kick – Add chili flakes or sriracha if you like it spicy!
