Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced
- 8 oz chow mein noodles (or other noodles of choice)
- 2 tbsp vegetable oil, divided
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional for extra depth of flavor)
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp sugar (optional for a touch of sweetness)
- Salt and pepper, to taste
- Green onions, chopped for garnish
- Sesame seeds (optional, for garnish)
Instructions
Step 1: Prepare the Noodles
- Cook the chow mein noodles according to package instructions. Drain and set aside.
Step 2: Cook the Chicken
- In a large skillet or wok, heat 1 tbsp of vegetable oil over medium-high heat.
- Add the sliced chicken and season with a pinch of salt and pepper. Cook for 4-5 minutes until the chicken is browned and cooked through.
- Remove the chicken from the skillet and set aside.
Step 3: Sauté the Vegetables
- In the same skillet, add the remaining 1 tbsp of oil.
- Add the onion, bell pepper, carrot, and broccoli, and sauté for 3-4 minutes until the vegetables are slightly tender but still crisp.
- Add the minced garlic and cook for another 1 minute until fragrant.
Step 4: Make the Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, and sugar (if using).
- Pour the sauce over the vegetables in the skillet.
Step 5: Combine Everything
- Add the cooked noodles and chicken back into the skillet. Toss everything together until evenly combined and heated through.
- Cook for an additional 1-2 minutes, allowing the noodles to soak up the sauce.
Step 6: Serve & Garnish
- Serve the chow mein hot, garnished with chopped green onions and sesame seeds (if desired)
Notes
Use day-old noodles – If you have leftover noodles, they work great here and are less likely to be soggy.
Customize your veggies – You can use other vegetables like snap peas, mushrooms, or cabbage.
Adjust the sauce – If you prefer a sweeter or saltier taste, adjust the soy sauce or sugar to your liking.
Don’t overcook the veggies – The veggies should stay slightly crisp for the best texture contrast.
