Ingredients
For the Chicken:
- 1 lb chicken breast (thinly sliced)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper, to taste
For the Veggies:
- 1 large onion (thinly sliced)
- 1 bell pepper (thinly sliced)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
For Assembly:
- 4 sandwich rolls (hoagie or sub rolls work best)
- 4 slices provolone cheese (or your favorite cheese like mozzarella or cheddar)
- 1 tablespoon butter (for toasting the rolls, optional)
Instructions
Step 1: Cook the Chicken
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add the sliced chicken and season with garlic powder, onion powder, paprika, salt, and pepper.
- Cook the chicken for about 5-7 minutes, stirring occasionally, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
Step 2: Cook the Veggies
- In the same skillet, add 1 tablespoon olive oil and the sliced onions and bell peppers.
- Season with salt and pepper, and sauté over medium heat for 5-7 minutes until the veggies are soft and caramelized.
- Add the cooked chicken back into the skillet, mixing everything together.
Step 3: Toast the Rolls (Optional)
- If you want toasted rolls, heat a skillet over medium heat.
- Spread butter on the inside of the sandwich rolls and place them butter-side down in the skillet.
- Toast for about 2-3 minutes until golden and crispy.
Step 4: Assemble the Sandwiches
- Divide the chicken and veggie mixture evenly among the sandwich rolls.
- Top each sandwich with a slice of provolone cheese.
- Cover the skillet and cook for 2-3 minutes until the cheese melts.
