Ingredients

  • Bread (2 slices, whole grain or sourdough) – A sturdy base for your toppings.
  • Avocado (1 ripe, mashed) – Creamy and full of healthy fats.
  • Eggs (2 large) – Perfectly fried for a runny yolk.
  • Olive Oil or Butter (1 tbsp) – For cooking the eggs.
  • Salt & Black Pepper (to taste) – Enhances the flavors.
  • Red Pepper Flakes (½ tsp, optional) – Adds a little kick.
  • Lemon Juice (1 tsp) – Brightens up the avocado.
  • Cherry Tomatoes (4, sliced, optional) – For extra freshness.
  • Feta Cheese (1 tbsp, crumbled, optional) – Adds a salty, tangy touch.
  • Microgreens or Fresh Herbs (for garnish, optional) – Adds freshness.

Instructions

Step 1: Prepare the Avocado Spread

  1. In a small bowl, mash the ripe avocado with a fork.
  2. Mix in the lemon juice, salt, and black pepper to taste.

Step 2: Toast the Bread

  1. Toast the bread slices until golden and crispy.

Step 3: Fry the Eggs

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Crack in the eggs and cook for 3–4 minutes until the whites are set but the yolks remain runny. (For a firmer yolk, cook 1–2 minutes longer.)
  3. Season with salt, pepper, and red pepper flakes.

Step 4: Assemble the Toast

  1. Spread the mashed avocado mixture onto the toasted bread.
  2. Top each slice with a fried egg.
  3. Garnish with cherry tomatoes, feta cheese, and microgreens, if using.

Step 5: Serve & Enjoy!

  1. Serve immediately with your favorite coffee or smoothie for a perfect meal.

Notes

  • Use Ripe Avocados – They should be soft but not mushy.
  • Pick a Good Bread – Sourdough or whole grain works best.
  • Fry the Egg to Your Liking – Runny yolk for richness, fully cooked for a cleaner bite.
  • Experiment with Toppings – Try smoked salmon, crispy bacon, or everything bagel seasoning!
