Brown Sugar Pop Tart Cookies

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 2 Brown Sugar Cinnamon Pop-Tarts, chopped into small pieces

For the Glaze:

  • 1 cup powdered sugar
  • 1 1/2 tbsp milk (more if needed)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract

Instructions:

1. Preheat & Prep

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.

2. Make the Cookie Dough

  • In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  • Mix in eggs and vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Gradually add dry ingredients to the wet mixture.
  • Fold in chopped Pop-Tarts.

3. Bake the Cookies

  • Scoop dough into balls and place on the baking sheet (about 2 inches apart).
  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Let them cool for 5 minutes on the baking sheet before transferring to a wire rack.

4. Make the Glaze & Drizzle

  • Whisk together powdered sugar, milk, cinnamon, and vanilla extract.
  • Drizzle over cooled cookies and let it set before serving.

Tips for the Best Pop Tart Cookies:

For Extra Crunch – Sprinkle crushed Pop-Tarts on top before baking!
Chewier Cookies – Slightly underbake them for a soft and gooey center.
