  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp salt

  • 2 medium apples, peeled and chopped

  • 2 large eggs

  • ½ cup unsweetened applesauce

  • ⅓ cup maple syrup or honey

  • 1 tsp vanilla extract

  • ½ cup milk (dairy or any plant-based milk)

  • Optional: ¼ cup chopped walnuts or pecans

  • Optional topping: thin apple slices, extra oats, or a sprinkle of cinnamon


Instructions

Step 1: Prep the Oven and Pan

  1. Preheat your oven to 350°F (175°C).

  2. Lightly grease or line an 8×8-inch baking pan with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a large bowl, combine rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.

  2. Stir in the chopped apples.

Step 3: Mix Wet Ingredients

  1. In a separate bowl, whisk together eggs, applesauce, maple syrup, vanilla, and milk.

  2. Pour the wet ingredients into the bowl with the dry ingredients and mix until well combined.

  3. Fold in nuts if using.

Step 4: Bake the Cake

  1. Pour the mixture into the prepared baking dish.

  2. Top with extra apple slices or a sprinkle of oats and cinnamon if desired.

  3. Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean from the center.

Step 5: Cool and Serve

  1. Let the cake cool in the pan for at least 10 minutes before slicing.

  2. Serve warm or at room temperature. Great on its own or topped with yogurt or nut butter.

Use Sweet Apples – Varieties like Honeycrisp, Gala, or Fuji work well.
