Instructions
Step 1: Prepare the Cookies
- Lay out 8 Biscoff cookies on a flat surface, flat side up.
Step 2: Add Ice Cream
- Allow the vanilla ice cream to soften slightly at room temperature (about 5–10 minutes) to make it easier to scoop and spread.
- Using a spoon or an ice cream scoop, place a generous scoop of ice cream on top of each of the 8 cookies. You want to have enough ice cream to create a thick layer.
Step 3: Assemble the Sandwiches
- Place the remaining 8 Biscoff cookies, flat side down, on top of each ice cream scoop, gently pressing down to form a sandwich.
Step 4: Roll in Toppings (Optional)
- If desired, roll the edges of the ice cream sandwiches in chocolate chips or crushed Biscoff cookies for added texture and flavor.
Step 5: Freeze
- Place the sandwiches in the freezer and let them freeze for at least 2 hours, or until the ice cream is firm and the sandwiches are set.
