Ingredients
For the Cookies:

1 cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg
-
2 tbsp honey
-
1 tsp vanilla extract

2¼ cups all-purpose flour

½ tsp baking powder

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

½ cup finely chopped walnuts or pistachios
For the Cream Filling:

½ cup unsalted butter, softened

1½ cups powdered sugar

2 tbsp honey
-
½ tsp ground cinnamon

1–2 tbsp milk (as needed for consistency)

Optional: finely chopped pistachios or walnuts for rolling edges
Instructions
Step 1: Make the Cookie Dough

In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.

Beat in the egg, honey, and vanilla extract.

In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

Gradually add dry ingredients to wet, mixing until just combined.

Fold in chopped nuts.

Chill the dough for 30 minutes for easier shaping and better texture.
Step 2: Bake the Cookies

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Scoop dough into 1-tablespoon balls and place 2 inches apart on the baking sheet.
