  • 4 cod fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup coconut milk (full fat for best creaminess)
  • ½ cup chicken or vegetable broth
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • ½ teaspoon paprika
  • ½ teaspoon red pepper flakes (optional, for spice)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano (or thyme)
  • 2 tablespoons butter (for extra richness)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil or butter.

Step 2: Make the Coconut Lemon Cream Sauce

  1. In a small saucepan, heat olive oil over medium heat.
  2. Sauté the garlic for 30 seconds until fragrant.
  3. Add coconut milk, broth, lemon juice, zest, paprika, red pepper flakes, salt, and black pepper.
  4. Simmer for 2-3 minutes, stirring occasionally.
  5. Stir in butter until melted, then remove from heat.

Step 3: Bake the Cod

  1. Place cod fillets in the greased baking dish.
  2. Pour the coconut lemon cream sauce over the fillets.
  3. Sprinkle with dried oregano for added flavor.
  4. Bake for 15-18 minutes, or until the fish flakes easily with a fork.

Step 4: Serve & Enjoy!

  1. Garnish with fresh parsley and serve with lemon wedges.
  2. Pair with rice, quinoa, or roasted vegetables for a complete meal.

Use fresh cod – Fresh or high-quality frozen cod gives the best texture.
