  • 4 large cabbage leaves (outer, sturdy leaves work best)
  • 1 lb ground beef (or chicken, turkey, or plant-based protein)
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg (optional, to bind the mixture)
  • 1/2 cup breadcrumbs (or almond flour for a low-carb version)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • Cheese slices (optional, like cheddar or Swiss)
  • Toppings (lettuce, tomato, pickles, mustard, etc.)

Instructions

  • Prepare the Cabbage Nests
    Preheat the oven to 375°F (190°C). Carefully remove 4 large cabbage leaves from the head of cabbage. Place them on a baking sheet and bake for about 10-15 minutes, or until they start to soften but remain sturdy enough to hold the burgers. This will help them become flexible for wrapping the burgers later.

  • Make the Burger Patties
    In a bowl, combine the ground beef (or alternative protein), chopped onion, minced garlic, egg (if using), breadcrumbs (or almond flour), Worcestershire sauce, salt, and pepper. Mix until well combined. Divide the mixture into 4 equal portions and form them into burger patties.

  • Cook the Patties
    Heat a large skillet over medium-high heat and cook the patties for 4-5 minutes on each side or until they’re fully cooked through and browned on the outside. If adding cheese, place a slice on each patty during the last minute of cooking and cover to melt.

  • Assemble the Cabbage Nest Burgers
    Once the cabbage leaves are softened, place each patty onto the center of a cabbage leaf. Fold the sides over the patty to create a “nest,” fully encasing the burger.

  • Serve
    Serve the cabbage nest burgers warm with your choice of toppings like lettuce, tomato, pickles, and mustard, or enjoy them on their own for a lighter option.

  • Cabbage Leaves: Be sure to pick cabbage leaves that are large and sturdy enough to wrap around the burger patty. You may want to steam or blanch the cabbage leaves slightly for extra flexibility.
  • Low-carb Options: These burgers are naturally low-carb, and you can skip the cheese or swap it with a dairy-free alternative to make it a fully dairy-free meal.
  • Extra Flavor: Add seasoning to the burger mixture like paprika, chili powder, or herbs like thyme and rosemary for more flavor.
