Instructions
Step 1: Make the Apple Filling
-
In a medium skillet, melt 1 tbsp butter over medium heat.
-
Add diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt.
-
Stir and cook for 6–8 minutes, until apples are tender and caramelized.
-
Remove from heat and let cool slightly.
Step 2: Prepare the Cheesecake Filling
-
In a mixing bowl, whisk together cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth and creamy.
-
Set aside or refrigerate if prepping ahead.
Step 3: Assemble the Quesadillas
-
Lay out the tortillas on a flat surface.
-
Spread a generous layer of cheesecake filling on half of each tortilla.
-
Spoon the apple mixture evenly over the cream layer.
-
Fold each tortilla in half, pressing lightly to seal.
Step 4: Cook the Quesadillas
-
Heat a non-stick skillet or griddle over medium heat.
-
Lightly butter or oil the surface.
-
Place one or two quesadillas in the skillet and cook for 2–3 minutes on each side, until golden brown and crisp.
-
Repeat with remaining quesadillas.
Step 5: Garnish & Serve
-
Cut quesadillas into wedges.
-
Sprinkle with cinnamon sugar or powdered sugar if desired.
-
Drizzle with maple syrup or honey, and top with whipped cream or chopped nuts for extra indulgence.
Notes
Use Crisp Apples – Varieties like Granny Smith or Honeycrisp add great flavor and texture.
Soften the Cream Cheese – This makes mixing the filling much easier.
Cook Low and Slow – Don’t rush the quesadillas; golden and crisp is the goal.
Add Texture – A handful of toasted nuts inside or on top adds a lovely crunch.
Double the Recipe – These are freezer-friendly and perfect for meal prep.
