Ingredients

Scale

1 medium fresh pineapple (peeled, cored, and sliced into ½-inch rings or chunks)
1 tbsp melted coconut oil (or neutral oil of choice)
1 tbsp maple syrup or honey
½ tsp ground cinnamon
Pinch of sea salt
Optional toppings: shredded coconut, vanilla yogurt, or lime zest for serving

Instructions

Step 1: Prep the Pineapple

  1. Peel and core the fresh pineapple, then slice into ½-inch thick rings or chunks.

  2. Pat the pieces dry with a paper towel to help them caramelize better in the air fryer.

Step 2: Make the Coating
3. In a mixing bowl, whisk together melted coconut oil, maple syrup (or honey), cinnamon, and a pinch of sea salt.
4. Toss the pineapple pieces gently in the mixture until evenly coated.

Step 3: Air Fry the Pineapple
5. Preheat your air fryer to 380°F (193°C) for 2-3 minutes.
6. Arrange the pineapple slices in a single layer in the air fryer basket. Avoid overcrowding for even cooking.
7. Air fry for 10-12 minutes, flipping halfway through, until the pineapple is golden and slightly crisp on the edges.

Step 4: Serve & Enjoy
8. Remove the pineapple from the air fryer and let cool for a minute or two.
9. Sprinkle with shredded coconut or lime zest for extra tropical flavor.
10. Serve as-is, over yogurt, with ice cream, or alongside grilled chicken or burgers.

Notes

Use Fresh Pineapple – While canned works in a pinch, fresh pineapple offers better texture and flavor.
Don’t Skip the Oil – It helps the pineapple caramelize and prevents sticking.
Adjust Sweetness – Add more or less maple syrup depending on how sweet your pineapple is.
Slice Evenly – Try to keep pieces uniform so they cook evenly.
Watch Closely – Some air fryers cook faster, so keep an eye to avoid burning.
