How to Make It:
Step 1: Cook the Shrimp
- In a large skillet or wok, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat.
- Add the shrimp and cook for 2-3 minutes per side, until they turn pink and are cooked through.
- Remove the shrimp from the skillet and set aside.
Step 2: Sauté Vegetables
- In the same skillet, add a bit more oil if needed and sauté the diced bell pepper, onion, and garlic over medium heat for 2-3 minutes, until softened.
- Add the frozen peas and carrots and cook for another 2 minutes.
